Spruce Beer is made by boiling the young shoots of Spruce Trees (not neceassarily Brewer's Spruce) in place of hops and sugar. The Spruce adds a bitterness and flavour to the drink as do hops, but Spruce is not soporific like hops but rather a stimulant which tends to keep you awake whilst becoming drunk (whereas hops are soporific, and tend to send the imbiber to sleep when they have consumed too much). As such, it is a more dangerous alcoholic beverage than is beer made from hops. It is a very refreshing drink, your Author himself used to brew it.
